Turned out DELICIOUS and I decided to share&#8230; <\/p>\n<div style=\"clear:both;\"><\/div>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/silenceoftheclams.com\/blog\/wp-content\/uploads\/bb_brownies-523x279.jpg\" alt=\"\" title=\"Black Bean Brownies\" width=\"523\" height=\"279\" class=\"floatleft\" \/><\/p>\n<div style=\"clear:both;\"><\/div>\n<p><em class=\"b\">Black Bean (Mint) Brownies<br \/>\n<\/em><br \/>\n<\/p>\n<div style=\"clear:both;\"><\/div>\n<ul>\n<li>1 15oz. can of UNSEASONED black beans &#8211; drained and rinsed\n<\/li>\n<li>4 eggs (extra large)\n<\/li>\n<li>1 cup Sugar (I used <a href=\"http:\/\/www.amazon.com\/exec\/obidos\/ASIN\/B000ORXYYS\/zulubug-20\" target=\"resource_window\">xylitol<\/a>)\n<\/li>\n<li>3 1\/2 tbsp. unsweetened cocoa powder  (I used Hershey&#8217;s Special Dark)\n<\/li>\n<li>1 tsp. baking powder\n<\/li>\n<li>2 tbsp. oil or butter\n<\/li>\n<li>1 Tbs Vanilla\n<\/li>\n<li>1\/2 tsp baking soda\n<\/li>\n<li>1\/4 cup ricotta or cream cheese\n<\/li>\n<li>Chopped nuts &#8211; optional (I used walnuts)\n<\/li>\n<li>4 &#8211; 5 drops Peppermint Essential oil (optional)<\/li>\n<\/ul>\n<p>Preheat oven to 350 degrees. Mix all ingredients but nuts in a food processor or blender- blend very, very well.  If you want them even more chocolaty, you could toss in some chocolate chips with the nuts at this point. <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/silenceoftheclams.com\/blog\/wp-content\/uploads\/goya_black_beans-150x150.jpg\" alt=\"\" title=\"Black beans\" width=\"150\" height=\"150\" class=\"floatrightnb\" \/>Pour into an 8&#215;8 baking pan sprayed with cooking spray or oiled with canola or olive oil. Bake for 30-40 minutes. (til toothpick pulls out clean).<\/p>\n<p>Who knew black beans could taste so moist and chocolaty!<br \/>\nI recommend these highly if you&#8217;re trying to go gluten free for cut down on carbs. <\/p>\n<p>By the way&#8230;   <em class=\"b\">Black Bean Brownies do not cause gas<\/em>.   Because the black beans are pureed, the fiber is broken down before you eat them.
